Course aim

To provide students with the knowledge of a range of food service systems and their management and management principles as they apply to dietetic practice in the public and private sectors.

Course content

This course will cover food services systems used in a range of institutions from food procurement to its distribution, HACCP. It will build upon learning from the course ‘HLTH 5174 Translating Nutrition into Food Practice’ on the provision of food that meets the nutritional requirements of specific client groups. Food and nutrition policies and procedures, quality management and benchmarking. The principles of effective management for dietetic practice in public institutions and private practice.
