To introduce students to further principles of general physical, organic and inorganic chemistry in the context of health, disease, the environment and foods and to provide students with more advanced practical experiences in chemical analysis.
The content of this course is presented in the context of life, health and disease. Oxidation - reduction reactions, energy considerations. Chemical reactions; energy, heat of reactions, energy value in foods. Concentration and functions of acids in foods and biochemical processes, buffers and buffering capacity. Gases, properties of gases, the combined and ideal gas laws, partial pressures and solubility, oxygen and carbon dioxide transport. The chemistry of foods: alcohols. carbonyl compounds, carbohydrates; structure, reactivity and metabolism. Amines, including heterocyclic compounds, amino acids, enzymes and proteins; levels of structure, function and metabolism. The structure and function of nucleic acids DNA, RNA, their role in protein synthesis.
