Course aim

To further develop knowledge of functional foods, nutraceuticals and biochemical processes in health and disease.  

Course content

Identification and characterisation of bioactive components in food. Effectiveness of bioactives on biochemical or physiological functions including disease prevention and the mechanisms of action. Examination of traditional diets of indigenous peoples (including Aboriginal Australians) rich with food bioactive components. Comparative studies on the effectiveness of bioactives on disease biomarkers. Prophylactic versus reactive treatment of disease with food bioactives. Delivery of bioactives in, or from foods – issues of formulation, product development, and encapsulation or slow release of protected components. The interaction between food and medicines and the toxicological aspects of functional foods or nutraceuticals. Regulatory requirements (TGA and FSANZ) that relate to therapeutic claims for functional foods and nutraceuticals.
