Course aim

The aim of this course is to provide students with a broad understanding of the complex issues involved in the provision of food and nutrition education to individuals and groups in various settings and to assist them to develop practical skills in the translation of food and nutrition principles into effective good practice.

Course content

Food production and the environment; achieving an ecologically sustainable food supply; the impact of food legislation and influence of the food industry and marketing practices on food choice; social and cultural influences on eating; a healthy diet; and collection of information on what people eat; the use and evaluation of food selection models, including the current Australian Guide to Healthy Eating and various other tools for assessing and planning diets; the use of national policies and strategies for changing food habits; selected food and nutrition initiatives and programs run by various government and non-government agencies; opportunities for development of practical skills in meal planning, shopping, budgeting and food preparation.
