Course aim

This course aims to provide students with an in depth knowledge of the roles, metabolic functions and requirements of the macro and micronutrients through the human life cycle, the nutrient content of foods and factors influencing nutrient content.

Course content

This course will cover the physiology and biochemistry of protein, carbohydrates, fats, vitamins, minerals, and phytochemicals. Electrolyte, water and acid base balance and factors influencing these. The nutritional requirements for each stage of the life cycle and the biochemical and physiological impact of deficiencies and excessive intakes of selected nutrients will be discussed. The nutrient content of foods and the factors influencing nutrient content and their bioavailability such as chemical environment, food preparation methods and the storage of food. Students will be introduced to basic non clinical nutritional assessment techniques including anthropometrics.
