To provide students with practical food service placement to enable them to apply their theoretical knowledge and further develop skills and knowledge to practice at an entry level.
Four weeks will be spent within an institution that provides food to its clients. This food service based placement will enable students to develop an in depth understanding of the food service system of one institution including how the service meets the nutritional requirements of its clients, personnel management, menu development and budgeting processes. During this placement students will gain experience in conducting a small food service based project.
