To consolidate students' understanding of the complex nature of the food and nutrition process and its relationship to healthy and active living. To allow students to develop their expertise in developing practical food skills in growing, selection, storage, preparation, cooking and serving food.
Students will consolidate their knowledge and skills for designing, producing and evaluating solutions for sustainable and safe food production and consumption, for instance students will evaluate the latest technological research on diet and diet related diseases for different stage of the life span and develop skills healthy eating for a particular audience eg a pre-school, taking into account cultural considerations. They will process and prepare high quality food items with consideration of ethical aspects such as food miles and fair trade. They will consider the traditional and contemporary methods of food production used in a variety of cultures, including Aboriginal and Torres Strait Islander culture and the countries of the Asian region.
